Calamarata made with pesto, green beans and potatoes
Ingredients for 4:

Calamari - squid
No. 30 - 200 gr ricotta
- mozzarella fior di latte
80 gr - 60 gr cheese seasoned
- beans for gr.
100 - 2 tablespoons pine nuts
- salt
For the pesto
- 2 bunches basil
- 1 clove garlic
- extra virgin olives
about 50 grams - salt
- 2 cubes Ice
For the potatoes and parmesan cheese fondue
- 1
potatoes - grated parmesan cheese 1 / 3 the weight of the potato
- about 100 ml milk

Preparation: Boil the potato fondue set, then pelarla and mash with a potato masher and set aside. 20-30 minutes before serving, depending on the speed of heating your oven.
Heat oven to 160 degrees.

Heat up a saucepan with about 70 grams of milk, salt and heat and bake the pan filled with rings. A hot milk
combine mashed potatoes, Parmesan cheese and heat well, add milk if necessary to obtain a smooth cream, blend with hand blender and season with salt.
After 80-10 minutes remove the pan from the oven and place the rings that seal with the potatoes.
Serve: Arrange the potatoes and cheese fondue in the dishes, put on six rings filled for each person, season with a couple of tablespoons of pesto sauce, pierce a potato stuffed in each ring crisp and serve.
